We had a great dinner with our dear friend and copyroom lady, Jo. One of the dishes was this very Shandong fish. I’m not sure how they prepare it to look all spiky and remove all the bones.
I’m not a fish eater, but some friends enjoyed this. The Chinese serve fish in this unique way with the skin on one side removed and the fish meat resembling thick shag carpeting.
